Date Pudding

Ingredients

Pudding

  • 1 c. chopped dates
  • 1 tsp. soda
  • 1 c. hot water
  • 1 egg
  • 1 c. sugar
  • 2 Tbsp. butter
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 c. chopped walnuts

Topping

  • 1/2 c. sugar
  • 1/2 c. water
  • 1/2 c. chopped dates
  • 1/2 c. chopped nuts
  • 1 Tbsp. butter

Directions

  1. Mix 1 cup chopped dates with soda and hot water; let stand.
  2. In a separate bowl, combine egg, sugar, butter, flour, baking powder, and walnuts.
  3. Stir this mixture into the first mixture.
  4. Pour into a greased 8- or 9-inch square pan.
  5. Bake 35 minutes in a 350°F oven.
  6. While the cake bakes, make the topping by cooking all topping ingredients together until thick.
  7. When the cake is removed from the oven, pour the hot topping over the warm cake.
  8. Serve with whipped cream.
