Zesty Italian Dressing Recipe

This homemade Italian dressing is easy to make, keeps well in the refrigerator, and uses common pantry ingredients.

Ingredients

  • 1 cup vinegar (apple cider vinegar, wine vinegar, rice vinegar, etc.)
  • 1-1/3 cups olive oil or other oil
  • 2 tablespoons water
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon honey, white sugar, or sucanat
  • 1 tablespoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 tablespoon dried parsley
  • 1 tablespoon salt

Instructions

  1. Add all ingredients to a glass jar or bottle with a tight-fitting lid.
  2. If using a narrow-neck bottle, add the dry ingredients first.
  3. Cover and shake thoroughly until well combined.
  4. Use immediately or refrigerate.
  5. Shake before each use.

Small-Batch Version

Based on the handwritten notes included with the recipe:

  • 1/2 cup vinegar
  • 1/2 cup olive oil
  • 1 tablespoon water
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon honey or sugar
  • 1/2 tablespoon oregano
  • 1/4 teaspoon pepper
  • 1/8 teaspoon thyme
  • 1/4 teaspoon basil

    Notes

  • The dressing keeps well in the refrigerator for an extended period.
  • Omitting one or two spices will still produce a flavorful dressing.
  • Shake before serving, as natural separation will occur.
