Turkish Doner Kebab
Meat Ingredients
- 2 lb ground beef
- 1 medium yellow onion, grated & squeezed dry
- 4 garlic cloves, minced
- 3 tsp sweet paprika
- 2 tsp each: garlic powder, onion powder, sumac, cumin, oregano
- 1 tsp mustard seed
- 1 tsp coriander
- Salt & pepper to taste
Sauce Ingredients
- 1/2 cup mayo
- 2 heaping tbsp labneh
- Juice of 1 lemon
- 3 garlic cloves
- 1 tbsp za’atar
- 3 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- Salt to taste
Roasted Veg
- 3 red bell peppers, sliced
- 3 jalapeños, sliced
- 2 onions, sliced
- Olive oil + salt
Directions (Meat)
- Combine ground beef, grated onion, garlic, and all spices. Mix until sticky and uniform.
- Place on parchment, cover with another sheet, roll into a tight log removing air pockets.
- Chill for one hour.
- Bake at 400°F for 30 minutes. Remove parchment. Optionally crisp at 425°F for 5 minutes.
- Rest 10 minutes, then slice thin.
Directions (Sauce)
- Blend all sauce ingredients until smooth and creamy.
- Chill.
Directions (Veg)
- Spread peppers, jalapeños, and onions on a sheet pan.
- Drizzle with olive oil + salt.
- Roast at 425°F until charred and soft.
Assemble
- Toast pitas
- Spread sauce
- Add sliced doner meat
- Top with roasted veggies
- Finish with extra sauce
